FRESH BERRY ICE CREAM PUDDING
| INGREDIENTS 2 L vanilla ice cream 250 g fresh strawberries 125 g fresh blueberries 125 g fresh raspberries 200 g chocolate honeycomb crushed Equipment 1 pudding basin | HOW TO MAKE
1.Line pudding basin with cling wrap leaving enough to hang over the edges.
2.Scoop ice-cream into a bowl for 5-10 minutes and then stir in berries and chocolate honeycomb.
3.Place in lined pudding bowl, cover top with cling wrap and then place in freezer for a few hours, or overnight.
4.When ready to serve, remove cling wrap from top, turn pudding bowl upside down and remove ice-cream and remaining cling wrap.

Notes
I have also used frozen mixed berries and this has also worked really well. Can be served with some additional berries and chocolate topping if desired. If you are not keen on chocolate honeycomb you could use other chopped chocolate bars of choice, such as Mars Bars.
