BLUEBERRY COCONUT ICE CREAM LOG
INGREDIENTS 1 cup frozen blueberries 1/2 cup fresh blueberries 2 1/2 cups coconut cream chilled 2 tbs coconut yoghurt 1 banana large frozen 1/4 cup honey raw 1 tsp vanilla bean extract Blueberry coulis 1 cup fresh blueberries 1/2 cup coconut sugar 1/4 cup water 1 tbs lemon juice Equipment blender | HOW TO MAKE
1.Blend all the ingredients (except fresh blueberries) in a high speed blender or food processor.
2.Once combined, stir through the fresh blueberries.
3.Place mixture into a GLAD-wrapped rectangular tin.
4.Freeze for at least 4 hours.
5.For the blueberry coulis: heat all the ingredients over medium heat in a small saucepan for 8 minutes. Then blend the mixture in a blender, or food processor until a smooth consistency. Strain mixture through a mesh strainer. Then refrigerate for at least 1 hour.
6.Remove the frozen ice cream from the tin. Then drizzle the blueberry coulis on top. Decorate with fresh blueberries, coconut chips and edible flowers.

Notes
It is important to remember to cling wrap the rectangular tin for easy removal of the frozen ice cream.
