Sup Kambing is commonly found at the mamak stalls in Malaysia and is the ultimate comfort food. A mamak stall is an Indian Muslim stall who are Muslims and they do not serve pork. The Malaysian Mamak are Malaysians of Tamil Muslim origin, whose forefathers mostly migrated from South India to the Malaysia centuries ago. This dish can be substituted with oxtail, lamb or chicken. Similar dishes are also available in other southeast asia countries like indonesia and singapore.
INGREDIENTS
- 600g mutton (cut into chunks)
- 8 shallots
- 1 inch ginger
- 3 garlic cloves
- spices (2 inch cinnamon stick, 4 cardamons, 4 cloves & 2 star anise)
- 2 tbsp coriander powder
- 2 tsp cumin powder
- ½ tsp white pepper
- ½ tsp salt
- 3 tbsp oil
- 5 cups of water
HOW TO MAKE
- Grind shallots, ginger and garlic together.
- Heat oil in a pan, add spices followed by the grinded paste for 5 min. Then add the coriander powder and cumin powder. Stir fry for 1 minute.
- Add the goat and cook for 5 min and add water. Bring to boil and add white pepper.
- Bring to boil and simmer for 1½ hours. When the goat is tender, add in salt and serve hot with steamed rice or bread.
