SALMON BURGERS WITH AVOCADO SALSA

INGREDIENTS
For the Burgers

1.1 lb - 500g Salmon fillet pieces (Approx 2 large pieces)
2 spring onions (scallions)
2 slices of bread (or use half a cup of breadcrumbs)
1 whole egg
½ Lime or lemon
1 tbsp Dijon mustard
Salt and pepper

For the Salsa

1 Large avocado
¼ red onion
1 garlic love
½ Lime or lemon
½ cup chopped cilantro (coriander)
2 tbsp extra virgin olive oil
HOW TO MAKE
1.Remove skin if any from the salmon pieces. Make sure there are no bones and cut into rough chunks.

2.To a food processor, add the bread and blend into coarse breadcrumbs, not too fine you want some texture.

3.Remove the roots and chop the washed spring onion (scallion), use both the white part and most of the green. Add to food processor along with the salmon pieces, salt and pepper, Dijon mustard, one whole egg and the juice of half a lime. Give the machine a couple pulses, you want a coarse mince. Set aside.

4.Cut the avocado lengthwise, remove the seed and peel the skin. Dice into small cubes and add to a mixing bowl. Add half a lime juice, the chopped cilantro (coriander), add finely chopped red onion, minced garlic clove, olive oil and salt & pepper and mix well.

5.Place our griddle pan on high heat, lightly brush it with olive oil.

6.Using your hands, form patties and place on hot griddle. You want to hear a slight sizzle. Turn griddle to low heat and cook until brown, then flip over. Approx 4 minutes each side on low heat.

7.Serve immediately topped with salsa and scattered leaves of cilantro (coriander).
Notes

If you don't own a food processor, you can also make this recipe by chopping the salmon with a knife. A coarser mixture will still be fine. 

You can also buy ready made panko bread crumbs.
