BLUEBERRY CRUSH


INGREDIENTS

  • 240g fresh blueberries
  • 2 limes, coarsely chopped
  • 2 tablespoons caster sugar
  • 4 mint sprigs
  • 1/3 cup (80ml) gin, vodka or white rum
  • 1/3 cup (80ml) blue curacao liqueur or orange-flavoured liqueur
  • 1 1/2 cups crushed ice
  • 1 1/2 cups (375ml) chilled lemonade
  • Lime slices, to serve
  • Mint sprigs, extra, to serve

How to Make

1.Thread half the blueberries onto 4 small bamboo skewers. Set aside.

2.Place the chopped lime, sugar, mint sprigs and remaining blueberries in a heavy- based bowl. Use the end of a rolling pin to crush until the lime and blueberries release their juices. Add the gin, vodka or rum and stir to combine.

3.Pour the curacao evenly among serving glasses. Top with ice. Strain the blueberry mixture over the ice. Top with lemonade. Serve with blueberry skewers, lime slices and extra mint.
