CHAI WITH INDIAN SWEETS
INGREDIENTS 5 green cardamom pods 2 cinnamon quills 6 whole black peppercorns 2 cups (500ml) milk 1/4 cup (55g) caster sugar 1 1/2 tablespoons loose black tea leaves Ground cinnamon, to dust | HOW TO MAKE
1.Lightly bruise all the spices in a mortar with a pestle. Transfer to a saucepan with milk, sugar and 1 cup (250ml) cold water. Cook over low heat for 2 minutes, then add the tea leaves and simmer for 1 minute until brewed and aromatic. Strain through a sieve into cups, dust with cinnamon and serve with Indian sweets.
