FRIED BATTERED CHICKEN FINGERS

INGREDIENTS
2 chicken breasts
½ cup all purpose (plain) flour
¼ cup corn starch (corn flour)
1 tsp baking powder
1 tsp garlic powder
¾ cup cold fizzy beer
4 spring onions (scallions or green onions)
salt
Frying oil (approx 4-5 cups)
HOW TO MAKE
1.In a mixing bowl combine the dry ingredients, flour, cornstarch (corn flour), baking powder, garlic powder and salt. Mix well.

2.Add the beer into the dry mix and mix well using a whisk as you slowly pour. Mix until there are no lumps. (Have a drink of beer)

3.Remove the roots and chop all the spring onions first into tiny slices then chopped like parsley. Add to the batter and mix well.

4.Slice the chicken breasts long wise into 5 finger shapes each.

5.Heat up your frying oil to 350°F – 180°C

6.Place some flour into a plate and coat each piece of chicken into the flour. Shake of any excess.

7.Dip each chicken finger into the batter and slowly lower it into the hot oil. (don’t burn fingers or use kitchen tongs). Cook only 3 or 4 at once for approx 4 minutes.

8.place on a cooling wire rack and continue cooking the rest.

9.For that extra crisp, cook a second time for approx 1 minute and serve immediately.
Notes
Serve with a sweet chili sauce.
