SPICED LAMB BURGERS WITH BLUE CHEESE & BACON


INGREDIENTS

  • 600g lamb mince
  • 1/2 cup fresh breadcrumbs
  • 2 garlic cloves, crushed
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoons ground cumin
  • 1 tablespoon ground coriander
  • 2 tablespoons finely chopped fresh mint leaves
  • 2 teaspoons extra virgin olive oil
  • 4 shortcut bacon rashers
  • 4 Castello Burger Blue cheese slices
  • 4 bread rolls, split, toasted
  • 1/3 cup whole-egg mayonnaise
  • 50g baby rocket
  • 1/3 cup balsamic beetroot relish
  • 400g cooked sweet potato fries, to serve

How to Make


1.Place mince, breadcrumbs, garlic, cinnamon, cumin, ground coriander and mint in a bowl. Season with salt and pepper. Mix well to combine. Shape into 4 x 2cm-thick patties. Place on a large plate. Refrigerate for 20 minutes.

2.Heat oil on a barbecue hotplate on medium-high heat. Cook bacon for 2 minutes each side or until golden. Transfer to a plate lined with paper towel. Cover to keep warm. Add patties to hotplate. Cook for 3 minutes. Turn. Place 1 slice of cheese on top of each Homemade burgers get patty. Cook for a further 3 minutes or until just cooked through and cheese starts to melt.

3.Spread roll bases with mayonnaise. Top with rocket, patties, bacon and beetroot relish. Sandwich with roll tops. Serve with sweet potato fries.
