CHICKEN TIKKA BURGER



INGREDIENTS
  • 500g shoestring fries (McCain Superfries brand)
  • 3 teaspoons ground coriander
  • 1 x 250g pkt naan bread (Patak's brand), halved
  • 600g chicken mince
  • 2 tablespoons tikka masala curry paste (Patak's brand)
  • 1 egg, lightly whisked
  • 70g (1 cup) fresh breadcrumbs (made from 1/2 day-old baguette)
  • 2 tablespoons vegetable oil
  • 1 mango, peeled, flesh chopped
  • 1/3 cup loosely packed fresh coriander leaves
  • 1 small red chilli, finely chopped
HOW TO MAKE
  • 1.Preheat oven to 230°C. Scatter fries on a large baking tray and sprinkle with coriander. Bake for 20 minutes, turning once.

  • 2.Place naan on small baking tray and sprinkle with water. Bake for 3-4 minutes. Remove and cover with foil to keep warm.

  • 3.Meanwhile, combine the chicken, masala, egg and breadcrumbs in a bowl. Shape into four 12cm patties. Heat oil in a non-stick frying pan over medium-high heat. Add patties and cook for 5-6 minutes each side or until brown and just cooked through.

  • 4.Combine mango, half the coriander and chilli in a bowl. To serve, place naan on serving plates. Top with chicken and mango mixture. Sprinkle with coriander leaves and serve with fries.
