MARINATED GOATS CHEESE


INGREDIENTS

  • 220g goats cheese
  • 80ml (1/3 cup) extra virgin olive oil
  • 1 tablespoon chopped fresh mixed herbs (such as mint, parsley and chives)
  • 1 small fresh red chilli, halved, deseeded, thinly sliced
  • 1 teaspoon finely grated lime rind

How to Make

1.Place the goats cheese in a serving dish.

2.Combine the oil, herbs, chilli and lime rind in a small bowl. Taste and season with salt and pepper. Pour over the cheese. Set aside for 1 hour to marinate.

Make it ahead: Start this recipe 2 hours ahead. Store the marinated goats cheese in a cool place at room temperature until ready to serve. Budget tip: Use the leftover fresh chives, parsley and mint from the other recipes in this menu to make the chopped mixed herbs for this recipe.
