MOCHA POTS DE CREME
ingredients
2 cups whipped cream
1 cup sugar
2 teaspoons vanilla
6 egg yolks
6 ounces Ghirardelli 100% Cocoa Unsweetened Bar Baking
1/2 cup of espresso coffee
6 (5 ounce) cup pot de creme or ramekins
How to Make
1.Heat the cream and sugar to a boil with the vanilla in a saucepan. Beat the egg yolks in a bowl. Whisk about a third of the boiling cream into the yolk. The rest of the cream to a boil, then immediately mixed boiled back into beaten egg yolks. Continue to cook, stirring constantly 15 or 20 seconds, until slightly thickened.
2.Strain the cream into a bowl and add the chocolate. Whisk with a smooth and fast in coffee, and pour it into the mold. Put into in to freezer until cool and almost frozen.
